CRAFT CITY / 堺

Start at Denshokan, not with an impulse purchase.

The Sakai Traditional Crafts Museum, also known as Sakai Denshokan, is a strong starting point. Its knife and grindstone shop lets you compare tools, while the knife museum explains history, techniques and the objects used in production. The city’s craft culture is broader than knives: textiles, incense and other local industries also appear.

Begin with what you cook. Vegetables, boneless meat and fish lead to different tool priorities than breaking down bones or opening shellfish. A single practical multipurpose knife may be a better first purchase than several specialist shapes you do not yet use.

Do not assume a demonstration happens every Friday because an old blog said so. Demonstrations, classes and language support need a current schedule or direct confirmation. A useful museum-and-comparison visit can still stand on its own if a workshop is unavailable.

Sharpening and handle fitting are not forging.

Wada Shouten describes an experience involving sharpening and handle attachment, generally around 60–90 minutes. Its published information explicitly says it cannot provide foreign-language support and accepts foreign visitors accompanied by an interpreter.

Treat the interpreter as a prerequisite, not a minor detail to solve at the door. Obtain written confirmation of the participant tasks, language arrangement, date, minimum party, chosen knife, all-in cost and cancellation rules. The price wording on the page is not clear enough to assume one universal inclusive total.

If what you want is hot-metal blade forging, this is not that lesson. If your goal is to understand edge care, handle attachment and how the knife feels in use, it may be much closer to what you need. Choose the learning outcome first, then the operator.

Not forging. Foreign visitors need an interpreter; confirm tasks and the inclusive quote in writing.

The questions that lead to a useful knife.

Ask about stainless versus reactive steel, edge geometry, whether the knife is single- or double-beveled, handedness, sharpening expectations and the tasks it should never be used for. “Harder” and “more expensive” are not universal improvements for every cook.

Hold the actual knife. Notice the handle, pinch grip and balance. Ask the shop to explain maintenance and offer a sensible sharpening starting point. A carbon-steel knife can be rewarding if you are willing to dry and care for it; it is a poor souvenir if it will be left wet in a sink.

Keep the blade protected for transport and follow the operating airline and airport rules. A knife belongs in properly packed checked baggage, not a carry-on. For tax-refund purchases, keep goods available for the required departure checks before surrendering the bag. Do not unpack or display a knife in public to show a friend.
